Often have to press Maximise shortcut more than once to truly maximise

Often when I press the Maximise shortcut, the result is not truly maximised, and I have to press it again once or twice to get the desired result.

It feels like the code is thinking "I'm already maximised..." (it isn't) "...so this keypress actually means un-maximise".

Thanks for reporting. Can you add send the logs for when this happens? Hold the option key in the menu bar menu and select View Logging.
