Bump Grafana & Prometheus versions

Hello, there ;).
Since our grafana and prometheus version is quite obsolete, do we have any obstacles to do not upgrade its versions up to grafana/11.4.0 and prometheus/v3.1.0?

Grafana and Prometheus Docker version upgrades look like a good idea.
We have to pay attention to the existing Grafana configuration (grafana.ini, dashboard json files). Maybe we need to upgrade them.
