Purpose of this PR

DOCATT-4971 - Improve screenshots that describe Third Person Follow setup (from user feedback)

• Updated all screenshots and annotations using the mascot and clearer setup from the ThirdPersonWithAimMode sample Scene.
• Removed from the example rig setup table some properties not relevant to the explanations below to get a more precise focus.
